  • 2 teaspoons xanthan gum
  • 1/4 cup tapioca starch
  • 1/2 cup dry milk powder
  • 3 teaspoons instant yeast
  • 4 tablespoons unsalted butter
  • 1 egg
  • 1 1/4 cups warm milk
  • 3/4 cup brown sugar for filling
  • 1 teaspoon cinnamon for filling
  • 1 cup confectioners' sugar for icing
  • 6 tablespoons butter for icing

Instructions

  1. Grease a 9-inch x 13-inch casserole dish.
  2. In a mixing bowl, combine gluten free flour blend, xanthan gum, tapioca starch, dry milk powder, instant yeast, and other dry ingredients.
  3. In another bowl, mix apple cider vinegar, butter, beaten egg, and warm milk; then combine with dry ingredients until a soft dough forms.
  4. Roll out the dough on a floured surface into a rectangle about ½ inch thick.
  5. Spread softened butter over the dough and sprinkle with brown sugar and cinnamon.
  6. Roll up tightly from one side and cut into equal pieces; place them in the greased dish.
  7. Cover and let rise in a warm place for about an hour until doubled in size.
  8. Preheat oven to 375°F (190°C) and bake for about 20 minutes until golden brown.
  9. For icing, mix confectioners' sugar with milk and butter until smooth; drizzle over warm rolls before serving.
