  • 2 teaspoons xanthan gum (if needed)
  • 1/4 cup tapioca starch/flour
  • 3 teaspoons instant yeast
  • 1/2 cup dry milk powder
  • 4 tablespoons unsalted butter (room temperature)
  • 1 egg (beaten)
  • 1 1/4 cups warm milk
  • 3/4 cup packed light brown sugar
  • 1 teaspoon ground cinnamon
  • Confectioners' sugar for icing

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9-inch x 13-inch casserole dish.
  2. In a mixing bowl, combine gluten-free flour blend, xanthan gum, tapioca starch, dry milk powder, yeast, cream of tartar, baking soda, brown sugar, and salt.
  3. In another bowl, mix warm milk with apple cider vinegar; let sit for five minutes. Then add butter and beaten egg; whisk until smooth.
  4. Gradually add wet ingredients to dry ingredients and mix until a soft dough forms.
  5. Roll out the dough to half an inch thick on a floured surface and spread softened butter evenly on top.
  6. Sprinkle brown sugar and cinnamon over butter; roll up tightly from one end and pinch seams to seal.
  7. Slice into one-inch pieces; place in the prepared dish cut side up. Cover and let rise until doubled in size (about an hour).
  8. Bake for about 20 minutes or until golden brown; cool slightly before icing.
