  • 2 cups heavy cream
  • 1 1/3 cups powdered sugar
  • 3/4 cup cold heavy cream
  • 2 tablespoons powdered sugar
  • 2 teaspoons vanilla extract
  • Grated chocolate for garnish (optional)

Instructions

  1. Preheat the oven to 325°F. Grease a 10-inch springform pan.
  2. Melt butter and chocolate together in a microwave-safe bowl, stirring until smooth.
  3. Whisk in sugar, vanilla, and salt; then add eggs one at a time, mixing well.
  4. Fold in gluten-free flour until combined and pour into the prepared pan.
  5. Bake for 30-35 minutes until set; cool completely on a wire rack.
  6. For the mousse, melt chocolate; mix with powdered sugar, cream cheese, and vanilla until smooth.
  7. Gradually add cold heavy cream while mixing; whip until fluffy.
  8. Spread mousse over cooled cake and refrigerate for at least 6 hours to set.
  9. In a stand mixer fitted with whisk attachment (or using hand mixer), combine whipped cream, powdered sugar, and vanilla on medium-high speed. Whip until stiff peaks form.
  10. Spread whipped cream over mousse layer and garnish with grated chocolate if desired.
