  • 2 medium spaghetti squash
  • 1 pound boneless, skinless chicken breasts
  • 8 ounces fresh spinach
  • 4 ounces cream cheese
  • 1 cup freshly grated parmesan cheese
  • 6 cloves garlic
  • olive oil
  • salt
  • pepper

Instructions

  1. Preheat the oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise, remove seeds, brush with olive oil, and season with salt, pepper, and garlic powder. Place cut-side down on a baking sheet and bake for 30-35 minutes until tender.
  2. In a skillet over medium heat, cook cubed chicken until golden brown; set aside. Sauté diced onion in remaining butter until translucent, add minced garlic and spinach until wilted.
  3. Stir in chicken broth, cream cheese, Greek yogurt, parmesan cheese, thyme, and red pepper flakes until combined. Return chicken to the skillet.
  4. Once squash is cool enough to handle, use a fork to create strands. Mix some filling with strands and fill each squash half generously with the remaining mixture.
  5. Top with extra parmesan cheese and bake for an additional 10-15 minutes until golden brown.
