  • 2 medium spaghetti squash
  • 1 pound boneless, skinless chicken breasts
  • 8 ounces fresh spinach
  • 4 ounces cream cheese
  • 1/2 cup plain Greek yogurt
  • 1 cup freshly grated parmesan cheese
  • Garlic
  • Onion
  • Butter
  • Olive oil
  • Chicken broth

Instructions

  1. Preheat the oven to 400°F (200°C). Halve the spaghetti squashes lengthwise and remove seeds. Brush with olive oil and season with salt, pepper, and garlic powder. Place cut-side down on a baking sheet and bake for 30-35 minutes until tender.
  2. In a skillet over medium heat, melt butter; add cubed chicken and cook until golden brown. Remove from skillet.
  3. Sauté diced onion in the same skillet until translucent; add minced garlic and spinach, cooking until wilted.
  4. Stir in chicken broth followed by cream cheese, Greek yogurt, parmesan cheese, thyme, red pepper flakes (if using), and cooked chicken. Simmer for 2-3 minutes.
  5. Scrape strands from baked spaghetti squash; mix with some filling. Stuff each half with the remaining mixture and top with extra parmesan.
  6. Return to the oven for another 10-15 minutes until cheese is melted and golden.
