  • 1¾ cups pre-shredded mozzarella
  • ¾ cup almond flour
  • 2 tbsp natural unsweetened yogurt
  • 1 egg
  • ½ tbsp baking powder
  • 2 tbsp melted butter
  • ½ tsp garlic powder
  • 1 tbsp fresh parsley (chopped)

Instructions

  1. Preheat your oven to 191°C (375°F).
  2. In a mixing bowl, combine mozzarella, almond flour, and yogurt. Microwave for 1 minute and stir; then microwave for another 30 seconds until fully melted.
  3. In a separate bowl, mix the egg with baking powder, then fold into the melted cheese mixture.
  4. Divide the dough into 10 portions, shape into balls, and flatten into ovals about 8mm thick on a baking sheet.
  5. Bake for 8-10 minutes until golden brown, brush with garlic butter mixture after baking, and return to the oven for 1-2 minutes.
