Ingredients

Scale
  • 1.5 pounds beef stew meat (cut into bite-sized pieces)
  • 1 tablespoon olive oil (for searing the beef)
  • 4 tablespoons unsalted butter (melted)
  • 3 cloves garlic (minced)
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon dried rosemary
  • 0.5 teaspoon salt (or to taste)
  • 0.25 teaspoon black pepper
  • 1 pound baby potatoes (halved)
  • 0.25 cup beef broth

Instructions

  1. Prepare ingredients by chopping beef into bite-sized pieces and halving the baby potatoes.
  2. Optionally parboil the potatoes for a few minutes to soften them slightly.
  3. In a skillet, heat olive oil over medium-high heat and sear beef bites until browned on all sides.
  4. In a mixing bowl, combine melted butter, minced garlic, onion powder, smoked paprika, thyme, rosemary, salt, and black pepper to create the garlic butter sauce.
  5. In your slow cooker, place halved baby potatoes followed by seared beef. Pour the garlic butter sauce over everything and add beef broth.
  6. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the beef is fork-tender.
  7. Let it rest for about 10 minutes before serving.
