  • 5 garlic cloves (minced)
  • 1 heaped tablespoon fresh ginger (minced)
  • 1 medium head of broccoli (cut into small florets)
  • 1 (15 oz) can of chickpeas (rinsed and drained)
  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar or balsamic vinegar
  • 2 tablespoons maple syrup
  • 1 tablespoon cornstarch
  • 1/3 cup vegetable broth
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon smoked paprika
  • Black pepper & sea salt (to taste)
  • Pinch of cayenne pepper

Instructions

  1. Heat the oil in a skillet or wok over medium heat.
  2. Sauté the diced onion, minced garlic, minced ginger, and spices until the onions are translucent (about 3–4 minutes).
  3. Add the broccoli florets and vegetable broth; cook until the broccoli is tender-crisp (around 10 minutes).
  4. In a mixing bowl, combine water, soy sauce, vinegar, maple syrup, and cornstarch; whisk until smooth.
  5. Pour the sauce into the pan along with rinsed chickpeas; bring to a simmer and cook for an additional few minutes.
  6. Taste and adjust seasonings as needed before serving hot over rice or on its own.
