  • 1 lb button or cremini mushrooms, sliced
  • 1 cup all-purpose flour
  • 1/2 cup cornmeal (optional)
  • 2 large eggs
  • 1/4 cup milk
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • Vegetable oil for frying

Instructions

  1. Prepare the ranch dressing by whisking together mayonnaise, sour cream, garlic powder, onion powder, dill, parsley, salt, pepper, and milk to desired consistency. Refrigerate until serving.
  2. For the coating, mix flour, cornmeal (if using), garlic powder, paprika, salt, and black pepper in one bowl. In another bowl, whisk together eggs and milk.
  3. Dip each mushroom slice in the egg mixture then dredge in the flour mixture. Let them rest for about 5 minutes.
  4. Heat vegetable oil in a deep skillet to 350°F (175°C). Fry mushrooms in batches for 2–3 minutes until golden brown and crispy. Use a slotted spoon to transfer them onto paper towels to drain excess oil.
  5. Serve warm with chilled ranch dressing for dipping.
