  • 1 egg
  • 1/3 cup almond meal or breadcrumbs
  • 1/3 cup grated Parmesan cheese
  • 4 ounces shredded Gruyère cheese
  • 6 ounces shredded Havarti cheese
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 1½ cups beef broth

Instructions

  1. Preheat your oven to 400°F and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine ground chicken, chopped onion, garlic, egg, almond meal (or breadcrumbs), Parmesan cheese, salt, and pepper. Mix well.
  3. Form meatballs using a scoop and place them on the baking sheet. Bake for 15-20 minutes until they reach an internal temperature of 165°F.
