  • ½ cup fresh blueberries

  • ½ teaspoon vanilla extract (optional)
  • ½ teaspoon lemon zest (optional)

Instructions

  1. Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. Drain excess liquid from the cottage cheese and blend until smooth.
  3. In a clean bowl, whip egg whites with cream of tartar until stiff peaks form.
  4. In another bowl, whisk together egg yolks, cottage cheese, cornstarch, and optional ingredients if using.
  5. Gently fold the egg yolk mixture into the whipped egg whites.
  6. Fold in blueberries carefully to avoid deflating the batter.
  7. Scoop the mixture onto the prepared baking sheet, spacing each portion about two inches apart.
