  • ½ cup full-fat cottage cheese (drained and blended until smooth)
  • 1 tablespoon cornstarch
  • ¼ teaspoon cream of tartar
  • 1 tablespoon powdered sweetener (optional)
  • ½ teaspoon vanilla extract (optional)
  • ½ teaspoon lemon zest (optional)
  • ½ cup fresh blueberries

Instructions

  1. Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. Drain any excess liquid from the cottage cheese and blend until smooth.
  3. In a clean bowl, whip the egg whites with cream of tartar until stiff peaks form.
  4. In another bowl, whisk together the egg yolks, blended cottage cheese, optional ingredients, and cornstarch until well combined.
  5. Gently fold the yolk mixture into the whipped egg whites without deflating them.
  6. Carefully fold in the blueberries.
  7. Scoop the batter onto the prepared baking sheet, spacing each scoop about 2 inches apart.
