  • 2 servings dry instant ramen noodles (140 g total)
  • 10 oz extra firm tofu or veggies/mushrooms (sliced)
  • 1 cup water or vegetable broth
  • 57 tbsp soy sauce
  • 1.5 tsp dark soy sauce (optional for colour)
  • 23 tbsp corn starch
  • 13 tbsp sugar (maple syrup or other liquid sweetener)
  • 2 tbsp rice vinegar (white vinegar or lemon juice)
  • 1/4 tsp ground pepper
  • 1/2 tbsp chili garlic sauce
  • 1 tbsp sesame oil
  • 2 cloves garlic (minced)
  • Chopped scallions (for topping)
  • Sesame seeds (for topping)

Instructions

  1. Prepare the sauce by mixing all liquid ingredients and seasonings in a mixing bowl.
  2. Boil water in a pot, then cook the ramen noodles for 2-3 minutes less than package instructions.
  3. Drain the noodles and set aside.
  4. Sauté your choice of veggies or tofu in a pan until cooked.
  5. Add the prepared sauce to the pan and let it simmer for 2-3 minutes.
  6. Mix in the drained noodles and cook together for another 3 minutes.
  7. Taste and adjust seasoning if needed before serving.
