  • 2 (15oz) cans low-sodium chickpeas, drained and rinsed
  • 12 tablespoons olive oil or avocado oil
  • 1 tablespoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • 1/2 teaspoon kosher salt (plus more for topping)
  • 1/4 teaspoon ground black pepper

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Rinse and thoroughly dry the chickpeas using a kitchen towel. Spread them evenly on the baking sheet to dry for an additional 5-10 minutes.
  3. In a mixing bowl, combine chili powder, garlic powder, onion powder, cumin, salt, and pepper. Drizzle oil over the dried chickpeas and toss to coat evenly. Add the spice mix and toss again until all chickpeas are coated.
  4. Roast in the oven for 25-30 minutes, tossing every 10 minutes until golden brown.
  5. Let cool for 5-10 minutes before serving, sprinkling with extra salt if desired.
