1 onion (diced)
1 bell pepper (diced)
2 cloves garlic (minced)
2 lb ground beef
4 tablespoons keto taco seasoning
2 tablespoons tomato paste
2 medium eggs
1½ cups shredded cheese
½ cup heavy cream
1 jalapeño (sliced, optional)
Instructions
Preheat your oven to 180°C/350°F. In a large skillet over high heat, sauté the diced onion, bell pepper, minced garlic, and ground beef until the meat is browned.
Stir in the taco seasoning and tomato paste until well combined. Transfer to a casserole pan and spread evenly.
In a mixing bowl, whisk together eggs, heavy cream, and half of the shredded cheese. Pour over the beef mixture in the casserole pan.
Top with remaining cheese and sliced jalapeños (if using). Bake uncovered for about 15-17 minutes until golden brown.
