1 onion (diced)
1 bell pepper (diced)
2 cloves garlic (minced)
2 lb ground beef
4 tbsp keto taco seasoning
2 tbsp tomato paste
2 medium eggs
1½ cups shredded cheese
½ cup heavy whipping cream
1 jalapeño (sliced, optional)
Instructions
Preheat your oven to 180°C/350°F.
In a large skillet over high heat, cook the diced onion, bell pepper, minced garlic, and ground beef until the beef is browned. Break it into bite-sized pieces using a spatula.
Stir in the taco seasoning and tomato paste until well combined. Transfer this mixture to a casserole pan, spreading it evenly.
In a mixing bowl, whisk together the eggs, heavy whipping cream, and half of the cheese. Pour this mixture over the beef in the casserole pan.
Top with the remaining cheese and optional sliced jalapeños.
Bake uncovered for 15-17 minutes or until golden brown. Let rest for 5 minutes before serving.
