  • 1 pound chicken tenderloins (or chicken breasts, cut into strips)
  • ½ cup flour
  • ½ teaspoon chili powder
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 2 eggs
  • 2 tablespoons water
  • ⅔ cup shredded sweetened coconut flakes
  • ⅔ cup panko bread crumbs
  • Oil for frying (or baking)
  • Sea salt flakes (for garnish, optional)
  • Sweet chili sauce (for serving)

Instructions

  1. Prepare four shallow bowls: one with flour, chili powder, salt, and pepper; the second with whisked eggs and water; the third with coconut flakes; and the fourth with panko.
  2. Coat chicken tenders in flour mixture, dip in egg wash, then coat with coconut flakes followed by panko breadcrumbs.
  3. Heat oil in a skillet over medium heat or preheat oven to 400°F for baking.
  4. Fry tenders for about 2-3 minutes per side until golden brown or bake on a parchment-lined sheet for about 15-20 minutes.
  5. Allow to cool slightly on a wire rack before serving with sweet chili sauce.
