  • 2 lb. boneless skinless chicken breasts
  • 1/4 cup all-purpose flour
  • 1/4 cup chopped cilantro
  • 2 tbsp coconut oil
  • 1 tbsp olive oil
  • 1 cup coconut milk
  • 2/3 cup chicken broth
  • Juice of 2 limes
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat a large skillet over medium heat and add coconut oil and olive oil.
  3. In a bowl, combine flour and cilantro. Coat each chicken breast in the mixture and place in the hot skillet.
  4. Sear chicken for 3-4 minutes on each side until golden brown; add minced garlic during the last minute.
  5. In another bowl, mix coconut milk, chicken broth, brown sugar, and juice from one lime.
  6. Pour the sauce over the chicken and bake in the preheated oven for 10-15 minutes until the internal temperature reaches 165°F (75°C).
  7. Drizzle with juice from the remaining lime before serving.
