  • ¼ tsp red pepper flakes
  • ½ cup sun-dried tomatoes (thinly sliced)
  • 1 cup chicken stock
  • ½ cup heavy cream
  • ¼ cup grated Parmesan cheese
  • 1 tbsp cornstarch
  • ¼ cup fresh basil leaves (for garnish)

Instructions

  1. Heat a skillet over medium-high heat and add olive oil. Season the chicken with salt and pepper, then brown for 2-3 minutes on each side. Remove from the skillet.
  2. Sauté minced garlic, Italian seasoning, oregano, red pepper flakes, and sun-dried tomatoes in the same skillet for about 2-3 minutes.
  3. Pour in chicken stock and heavy cream; add Parmesan cheese and whisk in cornstarch until smooth.
  4. Return the chicken to the skillet, cover with sauce, lower the heat, and cook for 15-20 minutes until fully cooked.
  5. Stir in fresh basil before serving warm with sauce spooned over the chicken.
