  • 4 boneless, skinless chicken thighs (or breasts)

  • ½ cup sun-dried tomatoes (drained and thinly sliced)
  • 1 cup chicken stock
  • ½ cup heavy cream
  • ¼ cup Parmesan (grated)
  • 1 tbsp cornstarch
  • ¼ cup fresh basil leaves (chopped)

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Brown chicken thighs for 2–3 minutes on each side; season with salt and pepper. Remove from skillet.
  2. In the same skillet, sauté minced garlic, Italian seasoning, oregano, red pepper flakes, and sun-dried tomatoes until fragrant (about 2–3 minutes).
  3. Pour in chicken stock and heavy cream; add grated Parmesan and whisk in cornstarch until smooth.
