  • 4 slices thick cut Turkey Bacon (diced)
  • 1 tablespoon vegetable oil
  • 1 tablespoon butter
  • 4 (1-pound) boneless skinless chicken breasts (pounded to ¼-inch thickness)
  • salt and fresh ground pepper (to taste)
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • 4 ounces cream cheese (softened)
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon dried dill weed
  • ½ teaspoon dried chives
  • 4 ounces shredded cheddar cheese (white or yellow – I use a little of both)
  • chopped fresh parsley
  • sliced green scallions

Instructions

  1. Preheat your oven to 400°F.
  2. Grease a 9×13 baking dish with cooking spray.
  3. In a skillet over medium-high heat, cook diced Turkey Bacon until crispy; remove from skillet.
  4. In the same skillet, add vegetable oil and sear seasoned chicken breasts until golden brown on both sides.
  5. Place chicken in the prepared baking dish and spread cream cheese mixture over each breast.
  6. Top with Turkey Bacon and shredded cheddar cheese.
  7. Bake uncovered for about 15 minutes until chicken is cooked through and cheese is melted.
  8. Garnish with remaining Turkey Bacon, chopped parsley, and green scallions before serving.
