  • 4 slices thick cut turkey bacon (diced)
  • 4 boneless skinless chicken breasts (pounded to ¼-inch thickness)
  • 1 tablespoon vegetable oil
  • 1 tablespoon butter
  • salt and fresh ground pepper (to taste)
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • 4 ounces cream cheese (softened)
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon dried dill weed
  • ½ teaspoon dried chives
  • 4 ounces shredded cheddar cheese (white or yellow)
  • chopped fresh parsley
  • sliced green scallions

Instructions

  1. Preheat your oven to 400°F.
  2. Lightly grease a 9×13 baking dish with cooking spray and set aside.
  3. Set a large skillet over medium-high heat. Add the diced turkey bacon; cook until crispy. Remove and set aside, reserving the fat.
  4. Return skillet to heat and add vegetable oil to the reserved turkey bacon fat.
  5. Pound chicken breasts to a ¼-inch thickness. Season with salt, pepper, garlic powder, and smoked paprika.
  6. Add seasoned chicken breasts to the hot oil and cook for about 2 to 3 minutes until golden brown on one side.
  7. Flip chicken, add butter, and cook for another 2 minutes until browned on both sides.
  8. Arrange cooked chicken breasts in the prepared baking dish.
  9. In a mixing bowl, combine cream cheese, garlic powder, onion powder, dill weed, and chives; mix until well combined.
  10. Spread about two tablespoons of the cream cheese mixture over each chicken breast evenly.
  11. Sprinkle cooked turkey bacon and shredded cheddar cheese over all chicken breasts.
  12. Bake uncovered for around 15 minutes or until chicken is cooked through and cheese is melted and golden.
  13. Garnish with remaining turkey bacon pieces, fresh parsley, and sliced green scallions before serving hot.
