  • 1 cup coconut milk
  • 1 1/2 cups heavy whipping cream
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 cup sweetened shredded coconut (toasted or fresh)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. Beat softened butter and granulated sugar with an electric mixer until fluffy.
  4. Add eggs one at a time, mixing continuously. Stir in vanilla and coconut extracts.
  5. Gradually combine dry ingredients with coconut milk, alternating between each until just mixed.
  6. Pour batter into prepared pans and bake for 25–30 minutes or until a toothpick comes out clean. Cool completely.
  7. For frosting: Beat cream cheese and powdered sugar until smooth; whip heavy cream to stiff peaks and fold into cream cheese mixture.
