  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 ½ lb boneless skinless chicken breasts (cut into 1” chunks)
  • 1 cup minced yellow onion
  • 24 ounces marinara sauce (low or no salt added)
  • 1 lb dried medium pasta (farfalle, campanelle, rigatoni)
  • 2.5 cups shredded mozzarella cheese
  • ½ cup grated parmesan cheese
  • Panko breadcrumbs

Instructions

  1. In a large Dutch oven, melt butter over medium heat. Add garlic and panko breadcrumbs; toast until golden brown, then set aside.
  2. Increase heat to medium-high and add olive oil. Pat the chicken dry and sauté for about 5 minutes until browned.
  3. Stir in onion and garlic; cook for another 3 minutes until fragrant.
  4. Add pasta, marinara sauce, and water; stir well and cover.
  5. Bring to a boil, reduce heat, and cook covered for about 6 minutes or until the pasta is al dente, stirring occasionally.
  6. Remove from heat and stir in cheeses before serving with the toasted panko on top.
