  • 1/2 ripe avocado, mashed
  • 1/2 cup cooked shredded chicken (grilled or rotisserie)
  • 2 slices of cheddar or Monterey Jack cheese
  • 1 tbsp mayonnaise or aioli (optional)
  • 1 tsp lemon juice
  • 1 tbsp butter (for toasting)
  • Salt and pepper to taste

Instructions

  1. In a mixing bowl, mash the avocado with lemon juice and season with salt and pepper.
  2. Spread mayonnaise on one side of each bread slice. On the opposite side of one slice, layer the avocado mixture, followed by shredded chicken and cheese. Top with the second bread slice, mayo side facing out.
