  • 1 1/2 tablespoons olive oil
  • 1 pound chicken breast, thinly sliced into bite-sized pieces
  • 7 cups broccoli florets (approximately 465 grams or about 2 heads)
  • 1/2 cup + 2 tablespoons chicken broth (plus more for cooking if desired)
  • 1/2 cup coconut aminos
  • 3 tablespoons lime juice
  • 1 tablespoon toasted sesame oil
  • 3 cloves garlic, minced
  • 1 inch fresh ginger, minced
  • 1/2 teaspoon red pepper flakes
  • 1 tablespoon tapioca flour
  • Salt and pepper, to taste
  • Optional toppings: sesame seeds, green onions, cilantro
  • For serving: white rice, cauliflower rice

Instructions

  1. In a small bowl, whisk together coconut aminos, chicken broth, lime juice, toasted sesame oil, garlic, ginger, red pepper flakes, salt, and pepper to create the stir fry sauce. In another jar, mix 2 tablespoons of broth with 1 tablespoon of tapioca flour until smooth; set both aside.
  2. Heat olive oil in a large skillet over medium heat. Cook sliced chicken in batches until browned on each side; remove and set aside.
  3. In the same skillet, add broccoli florets and season with salt and pepper. Cover and cook for 5–7 minutes until tender.
  4. Lower heat to medium-low and add both the sauce mixture and tapioca slurry to the pan. Whisk until thickened (3–5 minutes).
  5. Return chicken and broccoli to the skillet; stir to combine and heat through for about 1 minute.
  6. Serve warm over white rice or cauliflower rice, topped with optional sesame seeds and green onions.
