  • 2 cups mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup cherry juice
  • 1/4 cup granulated sugar
  • 2 tablespoons cherry preserves
  • 1 teaspoon vanilla extract
  • 1 cup fresh cherries, pitted and chopped
  • 1 package ladyfingers
  • 1/4 cup cocoa powder
  • 1/4 cup dark chocolate, shaved or grated

Instructions

  1. In a large bowl, mix together mascarpone cheese and heavy cream until smooth and fluffy (about 2-3 minutes).
  2. Add cherry juice, non-alcoholic amaretto substitute, and vanilla extract to the mixture; mix for another 1-2 minutes.
  3. In a separate bowl, combine granulated sugar with cherry preserves and gently fold this into the mascarpone mixture along with the chopped fresh cherries.
  4. Quickly dip ladyfingers into a mix of cherry juice and non-alcoholic amaretto substitute to moisten without soaking them too long. Arrange them in a 9×13 inch baking dish.
  5. Spread half of the mascarpone mixture over the ladyfingers. Repeat with another layer of dipped ladyfingers followed by the remaining mascarpone mixture.
  6. Cover with plastic wrap and refrigerate for at least 4 hours or overnight before serving. Dust with cocoa powder and sprinkle chocolate shavings on top just before serving.
