  • 1 lb chicken breast
  • 6 jalapenos (halved and seeds removed)
  • 3 cups fresh cauliflower florets
  • 1 1/4 cup cheddar cheese
  • 8 oz cream cheese (1/3 less fat)
  • 1/2 cup light sour cream
  • 2 tablespoons olive oil
  • 1/4 cup low-fat milk
  • 1 teaspoon cayenne

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. On a baking sheet, place the chicken breast and jalapenos. Drizzle with olive oil and sprinkle with salt. Bake for 20-25 minutes until cooked through.
  3. In a large bowl, combine cheddar cheese, cream cheese, sour cream, low-fat milk, and cayenne pepper.
  4. After cooking, shred the chicken and dice the jalapenos.
  5. Mix shredded chicken, chopped jalapenos, and most of the crumbled turkey bacon into the cheese mixture.
  6. Layer cauliflower florets in a 9 x 12 baking dish, pour over the cheese mixture, then top with remaining cheddar cheese and jalapenos.
  7. Bake for an additional 20 minutes or until golden brown on top.
