  • 6 oz low-sodium tomato paste
  • 1 tbsp balsamic vinegar
  • 9 oz fresh mozzarella cheese (sliced)
  • Handful of fresh basil (sliced)
  • 2 tbsp oil (divided)
  • 1/2 tsp salt (divided)
  • Ground black pepper (to taste)

Instructions

  1. Preheat a large deep skillet over medium heat and add oil.
  2. Cook chicken cubes until lightly browned, about 5 minutes.
