  • 2 boneless, skinless chicken breasts
  • 8 oz spaghetti or penne pasta
  • 2 cups cherry tomatoes, diced
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • 2 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Cook the pasta according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside.
  2. Season the chicken breasts with salt, pepper, garlic powder, and Italian seasoning.
  3. In a skillet over medium heat, cook the chicken in olive oil for about 5-7 minutes on each side until golden brown. Let it rest before slicing.
  4. In a mixing bowl, combine diced tomatoes, minced garlic, chopped basil, balsamic vinegar, olive oil, and salt to create the bruschetta topping.
  5. Toss the drained pasta in the same skillet with any chicken drippings. Slice the rested chicken and place it on top of the pasta. Spoon the bruschetta mixture over everything.
  6. Serve warm with grated Parmesan cheese and extra basil leaves if desired.
