  • 2 cups chopped vegetables (e.g., red onion, bell pepper, mushrooms)
  • 1 pound chicken sausage (removed from casings)
  • 8 eggs
  • 2 pinches salt (to taste)
  • 2 teaspoons unsalted butter
  • 8 burrito-sized tortillas
  • 2 cups shredded cheddar cheese

Instructions

  1. Preheat oven to 375°F if baking immediately.
  2. In a nonstick skillet, heat olive oil over medium heat. Sauté chopped vegetables until softened (about 4 minutes), then transfer to a bowl.
  3. Cook chicken sausage in the same skillet until browned and fully cooked; add to the vegetable mixture.
  4. In a separate bowl, whisk together eggs and salt. Scramble in the skillet with melted butter until softly set.
  5. Combine scrambled eggs with the sausage and veggies.
  6. On each tortilla, place one-eighth of the filling and a quarter cup of cheese. Wrap burrito-style.
  7. For crispy tortillas, place wrapped burritos seam-side down on a parchment-lined baking sheet and bake for 5-10 minutes.
