  • 1 tablespoon olive oil
  • 2 cups chopped vegetables (such as red onion, bell pepper, mushrooms or broccoli)
  • 1 pound chicken sausage
  • 8 eggs
  • 2 pinches salt (to taste)
  • 2 teaspoons unsalted butter
  • 8 burrito size tortillas
  • 2 cups shredded cheddar cheese (or Monterey jack, pepper jack or a combination)

Instructions

  1. Heat olive oil in a nonstick skillet over medium heat. Add chopped vegetables and sauté until softened (about 4 minutes). Transfer to a bowl.
  2. In the same skillet, cook chicken sausage until browned. Combine with the vegetables in the bowl.
  3. In another bowl, whisk eggs with salt until combined.
  4. Melt unsalted butter in the skillet over medium heat, then add the eggs. Cook gently until scrambled.
  5. Combine the eggs with the sausage and vegetable mixture.
  6. Assemble burritos by placing filling on tortillas and adding shredded cheese. Roll tightly.
  7. Bake at 375°F for 5–10 minutes if desired or freeze for later use.
