  • 250g digestive or graham crackers (for crust)
  • 300g fresh blueberries (for topping)
  • 800g full-fat cream cheese (for filling)
  • 260g granulated sugar (for filling)
  • 4 large eggs (for filling)
  • 75g butter (for crust)
  • 200g sour cream (for filling)

Instructions

  1. Preheat your oven to 180°C (350°F). Crush the crackers into fine crumbs and mix with melted butter and sugar. Press into the bottom of a springform pan.
  2. Toss blueberries with sugar, flour, and lemon juice. Set aside.
  3. Beat cream cheese until smooth; add sugars, sour cream, cornstarch, vanilla, and eggs one at a time until combined.
  4. Pour half the cheesecake mixture over the crust, layer half the blueberry mixture on top, followed by the rest of the cheesecake mix and remaining blueberries.
  5. Bake for about 85 minutes or until set but slightly jiggly in the center. Allow cooling completely before refrigerating for at least four hours or overnight.
