  • 1 lb chopped cauliflower
  • 8 slices turkey bacon
  • 1 pint grape tomatoes
  • 2 leeks
  • 2 tbsp dill pickle relish
  • 1/2 cup keto mayonnaise
  • 2 tbsp mustard
  • Green onions
  • Olive oil for drizzling
  • Pink salt
  • Cracked black pepper

Instructions

  1. Boil chopped cauliflower in salted water until tender (about 7 minutes), then drain and cool on a baking sheet.
  2. Preheat oven to 375°F. Roast halved grape tomatoes drizzled with olive oil and salt for 20-30 minutes until softened.
  3. Cook chopped turkey bacon in a skillet over medium heat until crispy; reserve some fat.
  4. Sauté rinsed leeks in reserved turkey bacon fat until tender; set aside to cool.
  5. In a bowl, mix pickle relish, mustard, mayonnaise, salt, and pepper for the dressing.
  6. Combine cooled cauliflower, green onions, turkey bacon, leeks, and roasted tomatoes in a large bowl; add dressing and mix well.
