  • 2 boneless chicken breasts
  • 1 small zucchini
  • 1 medium tomato (diced)
  • 1/2 cup mozzarella cheese
  • 1 Tablespoon olive oil
  • dash garlic powder
  • dash salt
  • 1/2 teaspoon basil
  • dash pepper
  • 1/2 teaspoon oregano

Instructions

  1. Butterfly slice the chicken breasts into four thin pieces. Season with garlic powder, salt, and pepper.
  2. In a frying pan, heat olive oil over medium heat and brown the chicken for 2-3 minutes on each side. Transfer to a medium baking dish.
  3. Sauté the zucchini until soft in the same pan. Add diced tomato, basil, oregano, salt, and pepper; cook for an additional 2-3 minutes.
  4. Pour the vegetable mixture over the chicken in the baking dish.
  5. Preheat your oven to 325°F (165°C) and bake for 20 minutes. Add mozzarella cheese on top and bake for an additional 5 minutes until melted.
