  • 2 cups digestive cookies or graham crackers
  • ½ cup melted butter
  • 3 cups fresh apple cider
  • 3 bricks cream cheese (softened)
  • 1 cup brown sugar
  • 1 cup sour cream
  • 3 large eggs
  • Mulling spices
  • 1 teaspoon cinnamon
  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon salt
  • 2 tablespoons powdered sugar

Instructions

  1. Boil apple cider with mulling spices until reduced to about 1/3 cup; set aside to cool.
  2. Preheat oven to 350°F (175°C).
  3. In a food processor, pulse cookies into crumbs; mix with melted butter, salt, and powdered sugar.
  4. Press mixture into a springform pan and bake for 10 minutes; cool.
  5. Lower oven temperature to 325°F (160°C). In a stand mixer, beat cream cheese and brown sugar until smooth.
  6. Add sour cream, vanilla, salt, cinnamon, and reduced cider; mix until creamy.
  7. Incorporate eggs one at a time followed by flour; blend until just combined.
  8. Pour filling into crust and bake in a water bath for about 90 minutes or until edges are set.
  9. Cool gradually in the oven before chilling for at least 8 hours.
